California Cole Slaw

We have been using this recipe for quite some time, though, tonight left out the oil as it does not work well with doing Weight Watcher's. Can't believe how much better it is now, it has a much fresher taste. REALLY awesome!!!

Alison's Slow Cooker Vegetable Beef Soup

With adding many of the substitutions given, it was FABULOUS! Added an extra potato, and an extra cup or so of water with a broth paste. Everyone really loved the combination of tomato and broth. So yummy we finished it for lunch the next day, was even better!!! Mmmmm..

Grilled Marinated Salmon

For it marinating for only 2 hours this was very well received!!! As it was in the middle of broiling the kitchen smelled just like the marinade, and this was before I poured off the marinade the Salmon was in and brought it to a boil, added a tad corn starch & water and poured 2 tablespoons over the top of the fully cooked, very moist Salmon :- ) Will marinate 4 hours next time and will see how it works out.

Slow Cooker BBQ Pork Chops

Our Pork Chops were SUPERB!! Everyone LOVED these! This is the most flavorful way to cook Pork Chops and we will never again bake or grill PC's. The key to attaining fabulously moist Pork Chops is to be generous with ones choice of sauce. I used about 70% of the bottle for 7 bone-in PC's in a 3 qt CP, top chop was dry. Chops must soak in sauce. Add onions if you love them! Mmmmmm.

Spicy Rapid Roast Chicken

Roasting rocks! Rave reviews! What a great midweek, "what am I going to do with this chicken?" recipe. I did a large package of drumsticks and they roasted wonderfully at the recommended temps. Our oven smoked a time or two in the past when some rather large "crumbs" escaped it's original pan (not a good thing!). Try this recipe again, the rub/sprinkle is very lovely.

Linguine With Clam Sauce

WOW!! Very rich, even with using light butter. Love the deep flavor, surely better than adding white wine. This is our new favorite dinner and so fast to put together- this deserves 10 stars!!! Always take advice of Italians and added the extra garlic, red pepper flakes and parmesan cheese. Even added extra parsley :-)

Garlic Red Potatoes

This was different and pretty well received. We all agreed roasted red potatoes with crushed garlic, olive oil, salt, pepper, red pepper and Italian seasoning is the one we will stick with.

Brussels Sprouts in Mustard Sauce

Enjoyed making it and the taste was nice. Likely won't make it again as I prefer to steam and saute with garlic and olive oil/butter or place it in the oven topped with bread crumbs and grated cheese, olive oil, and garlic.

Baked Asparagus with Balsamic Butter Sauce

I am used to roasting Asparagus with crushed garlic and olive oil. The balsamic took away from the natural flavor of the Asparagus. Just didn't do it for us, sorry.

Linda's Lasagna

Awesome Lasagna! Decided to use the cottage cheese and was pleasantly surprised. Used no boil noodles so added some extra water for the noodles to absorb, it worked out great. Drooling thinking about how good this was!!!!

Golden Sweet Cornbread

Fabulous!! It was a huge hit with my husband, may have been the best he has ever had. I used a bit less sugar and added a bit more oil as per the advice, it worked out perfectly for our tastes. Served it with vegetarian chili...Mmmmmmm

Salmon Patties I

I had misplaced my Salmon recipe I used many times in the past and loved. In the process of making this recipe, I needed to use all the liquid in the can to get it moist enough and then remembered this recipe was almost the exact recipe I used to have (found it on a can of salmon way back when). This was short on the second egg. Two eggs makes this recipe have a perfect moisture level. I always double this recipe and have it for a couple of days and freeze the left overs as I always use the large canned Salmon and it is indeed messy, but, worth it. I tend to like to crush the bones and use them in the patties (can't even tell it's there). They are wonderfully full of calcium and highly recommended by nutritionists.

Corn Fritters

GREAT stuff! So fast to prepare and cook. Froze fresh corn this past summer, had a craving for it, pulled a zip lock bag of it and whipped up these fritters! Going to make them tonight, but with apple (apple fritters). Cooked in canola oil in a 10-inch pan, did not need to deep fry it for them to be golden and fluffy and DELICIOUS! Yummo! Update: The apple fritters made with substituting the corn with apple are our my husbands favorite, making them large allows one to eat a nice sized snack all at once rather than having to keep running back into the kitchen. They are a favorite once in awhile treat when you want something different and yummy as can be :-)

The Best Meatloaf

This really is the best meatloaf! It's not bland like most meatloaf recipes. I used a very lean meat ground meat, it was so moist! Good-bye dry meat loaf! I raised the servings to 8, added two full eggs rather than the 1 1/3, used the Bold & Spicy A-1 sauce to give it extra zing..Mmmm, breadcrumbs I had in the freezer that I had made from whole- wheat bread, toasted, broken up, and put it a Cusinart blender that has super sharp blades. Left out the green peppers as I did not have any, didn't miss them, though I am sure you could add what you like and it would remain awesome providing the liquid level of this recipe is kept in balance with items added.
