Southwestern Pasta Salad
Made this for a family gathering. Only change made was to double the oil and throw in some black olives. Was a major hit with the family. Tastes better if allowed to sit in fridge overnight.

Bangers and Mash
This recipe tasted exactly like what I had in Ireland last week. I used Bratwurst and doubled the gravy. Delicious!

Lemon Curd
Excellent! Filled a coconut cake with this lemon curd for Easter and it was wonderful! Just the right balance of tart and sweet. The recipe couldn't be easier either. Will start using this regularly instead of my usual lemon filling.
