Wonderful recipe. It was a great way to use up a bunch of red and green cabbage that I had in the summer from the farmer's market. My husband (who is very picky) raved about this recipe.

Southwestern Spaghetti Squash

I really enjoyed this. It was my first experience with Spaghetti Squash and I was very pleased. The only problem was I ended up having to throw some of it away because it made a ton and my DH (who doesn't like black beans) wouldn't eat it and I couldn't finish it all.

Single Crust Peach Pie

This came out really soupy. When you cut into it the pie completely fell apart. Apart from the appearance (and that I had to eat it with a spoon), it was delicious!

Lemon-Maple Butternut Squash

I am not sure if my butternut squash was just really small or what but there was WAY too much liquid and it was WAY too sweet. I ended up making two decent size sweet potatoes and mixing that with the squash and the sauce. That helped even out the consistency and the sweetness but it was still a little too sweet for my taste.

Crab-Stuffed Catfish

This is absolutely delicious. My catfish was really thin and I wasn't able to slice the filets in order to put the crab mixture inside the fish so I ended up just putting it on top. It tasted amazing and I will definitely make again

Fried Cabbage II

This is the only way I make cabbage now. The bacon flavor is wonderful with the cabbage. Even my meat-loving husband asks for seconds (probably because it has bacon in it)

Catfish Tuscany

This was fantastic. I used sun-dried tomatoes that were sliced really thin and had been packed in oil. It gave it an amazing flavor. Another thing I liked about this recipe is that it is really simple and I could have a gourmet meal on the table in no time.

I really enjoyed this recipe. It was delicious. There was a lot of orange flavor which I really enjoyed. The only change I made was that I boiled the potatoes instead of baking them to save some time. I will make this again

Crab Quiche

I did make a few modifications to this so that might have helped make it a little better. I did not use a crust and I used real crab meat instead of imitation crab meat. I also used a really good swiss cheese. I made this for Christmas brunch and it was a hit. It will become our new traditional dish.

Cheese Ravioli with Pumpkin Sage Sauce

I think the fresh sage made a HUGE difference in this dish. It really gives it a great flavor. This is a quick, easy, and delicious fall recipe. The pumpkin was not overpowering at all.

Tofu and Veggies in Peanut Sauce

I was actually surprised at how good this was. I really enjoyed it. I did make a few alterations though (I usually don't like to change anything the first time I make it because I don't feel as thought it is really a fair rating but I didn't have all the ingredients on hand). I used honey instead of molasses, sesame oil instead of peanut oil, and rice vinegar instead fo regular. It turned out wonderful. It was also very simple to prepare. I will definitely make this again.
