Caramelized Baked Chicken
Excellent, tasty sauce! Used legs and thighs. Mine didn't carmelize either. I just put the drippings in a pot and boiled it off for a few minutes to thicken it up. Served it with rice too. My husband RARELY raves about any meal. The only time he ever says anything, is when he doesn't like it. When I ask how it was, he usually will just say it was good. To him, food is food. But he couldn't stop saying how good this was. He even wanted to take the leftovers to work for lunch! My picky 3 year old daughter loved it too. I think I'll try a little bit more garlic though next time, maybe a pinch of ginger too.

Chocolate Chip Muffins
Did not like this recipe. Shockingly enough, neither did my chocolate lover 3 year old daughter. Was tasteless. If it weren't for the chocolate chips, I think it would have been like eating styrofoam.

Soft Chocolate Chip Cookies II
I think I need my cookies to taste more buttery. And they didn't brown very well. Guess because of the shortening. I even baked them on a stone. That always browns them up nicely. They were chewy though. I like the Nestle Toll House recipe found on their 6 oz. bag. I just double that recipe but only use 1 stick of butter and bake at 350 for 9-13 minutes on the baking stone. Found this tip on their website for thick and chewy cookies. They really do stay soft too.
