Lime Fish Tacos

The fish was delicious and easy -- the lime does it. We skipped the mayonnaise, but had other condiments on hand to add, such as chopped black olives, roasted red peppers, and avocado.

Green and Red Tomato and Corn Soup

I was looking at 1/2 bushel end of season green and red tomatoes at end of October, with lots of fresh frozen corn in freezer. This looked like a winner and it was!! We did add leftover roasted chicken, including broth, and garbanzo beans, but I'm sure it's just as good stand alone. Also, had made roasted green tomatoes the night before and used that, thickened the soup nicely.

Tomato-Rich Fish Stew

I used leftovers from a basic fish (cod)/ tomato/ herb recipe from On Rue Tatin as a base for this stew, adding missing ingredients (except beans and more fish. The tomatoes were also all fresh from end of season garden. Great, great flavor!!

Roasted Squash Soup

I shared this recipe with my housemate because we wanted to make a soup out of about 2 cups pureed pumpkin and 3.5 cups cooked spaghetti squash we had left over from a dinner party. Using that as the base, she made a half recipe of this and it turned out great, I really love the apple in it. Maybe a little more curry and/or cumin would kick it up a bit more.

This was delicious and easy using the crockpot. The seasoning was just right. I served the sour cream on the side instead of adding, and added a salad and bread for quick weekday meal.

We love vegetable combinations with fish and this one with the squash was great. I had lots of chives to use from garden so used them in greater quantities and skipped onions and shallots; used stuffed green olives instead of black; and only used fresh basil due to lack of other herbs. Added at least 1 tsp. red pepper flakes. It's been hot this week, and the leftovers were also good just at room temperature, served over steamed spinach.

Italian Chicken Sausage Risotto

I was the "hovering" chef while my 19-year-old made this (in the past 2 months she's decided to cook every chance she can get). Not only was it SOOO GOOD, I'm SOOO PROUD of her for a great effort. As usual, a lot of stirring with risotto but well worth it.

Spinach Enchiladas Verde

Can't beat this one for taste and simplicity. I did add minced onions, mashed up garbonzo beans and some cilantro to each enchilada. Served with Chicken Mole.

Texas Black Bean Soup

Worked great for me, as is, forgot the green onions though. Served for friends from Alaska, with chipotle-spiced steak and mushrooms, and a salad. They always appreciate my home cooked meals.
