Simple Scones
I used half flour and half oatmeal, substituted Splenda for sugar, added lemon flavoring and lemon zest for the most tasty scone I have ever had. So easy when it is all done in food processor. Add dry ingredients to processor, toss in cold (not frozen) butter which is cut in chunks; process till crumbly; add other ingredients to make a ball of dough which is so easy to pat into shape, score or cut through, bake and enjoy! Great recipe! Will try raisins or cranberries next but lemon makes a great scone.

Coriander, Barley, Leek Soup
I am giving this delicious soup 5 stars even though I changed it somewhat. Used chicken stock instead of beef as I don't use beef. Did not have enough barley so used half barley and half brown rice, which worked just fine. I used 1 T. of coriander and 1/2 cup of rice wine vinegar, thinking I could add more of each if needed but was so good I stopped at that amount. Great soup, thanks!

Goat Cheese and Spinach Turkey Burgers
Very, very delicious burgers and so very easy. I did use feta cheese as that is what I had and it was the one seasoned with basil and tomato. Also added a little salt and pepper. They were a hit. Will make again for sure.
