Easy Fried Spinach
I added real bacon bits, mushrooms, can of chopped olives and some Kikkoman soy sauce. Almost like “Joe’s Special” without the eggs. I thought it was very tasty. Just remember the two bags of spinach really shrink while cooking.……

Hot Spinach and Artichoke Salad
mmmmmmmmmmmmmm, mmmmmmmmmmmmmm good. I have made this recipe numerous times and really enjoy the salad. So easy to prepare. I never measure, just start with drizzling olive oil on cookie sheet, add as much fresh spinach as possible, marinated artichoke hearts, some garlic salt, sprinkle with bacon bits, drizzle artichoke marinade from the jar over salad (be generous) and add feta cheese over top of salad. If you have a red onion, slice it thin and add it. Makes a complete meal for two. Thanks so much for the recipe....

Easy Mushroom Rice
DELICIOUS..... The aroma of this dish cooking filled the house. Could hardly wait for the rice to finish cooking. Somehow all of the mushrooms ended up on top of the rice and made for a nice presentation. Wish there was a rating for 10 stars, this recipe deserves it............
