I love to work in the kitchen, whether it's mixing drinks or baking cookies. I think I'm a pretty good cook and most people compliment my cooking, but there's always room for improvement. Someday I'm gonna be able to whip up some great gourmet cuisine!
My favorite things to cook
Appetizers and party foods are my favorite things to make. I also like to make pasta dishes (especially shrimp fra diavolo), anything with mushrooms, and chicken....it's just so versatile!
My favorite family cooking traditions
Chex Mix during the holidays... Every Christmas since I can remember, my dad and my uncle make a HUGE batch of their famous home made Chex mix. It's become one of the highlights of our time together. Everyone gathers in the kitchen awaiting their first handful while the mix bakes in the oven. I'm still not exactly sure what ingredients are in the sauce, and I've been watching them make it for 24 years now. Somehow my dad and my uncle have kept it all secret.
My cooking triumphs
My hot Spinach and Artichoke dip. After browsing a bunch of recipes for the dip, I took what I liked from each one and made my own version. I never thought it would be so popular...I am constantly asked to bring my dip to parties, gatherings and holiday dinners. I've made it so many times I don't even measure the ingredients anymore....I just eyeball everything and it seems to come out perfect every time.
My cooking tragedies
Teriyaki stir fry....my boyfriend and I were in the mood for some good stir fry. I went to the store and bought all kinds of really good veggies and some boneless chicken. I started cooking and everything was going really well. Then came time to add some teriyaki sauce. I dumped it onto the veggies and chicken and heard a really big sizzle and almost instantly everything in the pan turned black. I guess I had the heat up too high and the sugar in the teriyaki sauce burnt to a crisp. I was so upset. My boyfriend still managed to stomach a plate of it. He claims it didn't taste bad, but I know he was just trying to make me feel better. I haven't tried to make stir fry since.

Caramelized Baked Chicken
I modified this a bit... 1/4 C soy sauce 1/2 C ketchup 1/2 C honey 1/2 tsp. crushed red pepper flakes This is one of our favorite meals. We pour the sauce over boneless or bone in chicken and bake. I reccomend making mashed potatoes and broccoli with this chicken because the sauce can be drizzled over both it is so good! We look forward to this meal every time I make it.

Easy Cheese Ball II
Loved it! This was a HUGE hit at both cookouts I took it to. The first time I made individual size balls and the second time I made one giant cheese ball. Both times, there was none left. I minced up some corned beef and onion and added it to mine for a little more substance. HUGE success, I also only use 1/2 package of Ranch dressing mix. Very herby and wonderful!

Cake Balls
These do take a while to make, and 3 oz of chocolate is nowhere near enough to cover one batch. I made a double batch and it took me 3 hours from start to finish. I made 2 devils food cakes, mixed chocolate frosting and mint extract in one and caramel coconut frosting in the other. I coated them both in melted semi-sweet chips then decorated them. The wow factor is definitely here with these and most people thought I bought them from a bakery. They taste like rich, smooth truffle candies. In my opinion, cake balls are great, but this recipe needs some adjustment. Here are my tips: Don't use the whole can of frosting, start with half and add more as you need it. The mix should be sticky enough to form balls but not soggy. Also, I put the balls in the freezer for 30 minutes before dipping them and I had no problem with them falling apart. DO NOT USE CHOCOLATE BARK OR CANDIE QUICK, those products taste waxy and overly sweet. Use a bag of semi-sweet chips with a tiny bit of oil to make it smooth over a double boiler and they come out WAY better. Even though these took a while to make, I had fun making them and the taste was out of this world. Numerous people asked for the recipe. I will make these again.
