Amy's Barbecue Chicken Salad
This salad was delish...gave it 4 for just a few variations (I think). I used mostly spinach with a little fresh romaine mixed in, mixed up the black beans, corn and cilantro before putting on the salad. I also seasoned the chicken and used barbecue sauce before cooking the chicken instead of dipping on the side. Added sliced avocado and red onion, used salsa as a dressing and a dollup of low fat sour cream...the leftovers are even better!

Buffalo Chicken Dip
I only gave this recipe 4 stars b/c I made SLIGHT variations--this is wildly popular with guests! I only use 1 pack of the cream cheese, I mix white italian cheese (mozzarella or whatever i have on hand) as well as Cheddar/Jack Mix. In addition to this I add about 1 tbs. butter (maybe less)--I found that this prevents the coagulated cheese effect--I put ALL ingredients in the crock pot (start with softened cream cheese to get it melting), and add the cheese slowly. Superbowl party hit!

Cranberry, Sausage and Apple Stuffing
This was my first time making homemade stuffing...and it was delicious. I pretty much followed the recipe as is (I didn't peer over it the entire time but tried to follow it as closely as possible). the one change I made and suggest folks try it is I used slices of RYE and PUMPERNICKLE (sp) bread--the flavors molded ever so nicely...will make this again for sure!
