Breakfast Casserole III

Baking the potatoes definitely enhanced the taste, however there seemed to be too much potatoes. It IS tasty, however!

As easy and delicious as promised, it has become a favorite over rice, mashed potatoes, noodles - even ladled over open-faced rolls. Re-heating isn't the best aspect of this dish, that is true - but there's not much left at my house to worry about ever reheating!

Best Bruschetta Ever

Excellent! I didn't add balsamic vinegar - but I did do 1/2 tsp dried basil and added four leaves of chopped fresh basil. The flavor is intense - and one I WILL be making again and again! It's one of the few things my husband now asks me to make for the weekends when we go places or people come here.
