Alaskan Halibut Lasagna

I have made this recipe twice, both times using chicken instead of fish, with equally tasty results! A great new twist on classic lasagna. Reminds me of an alfredo sauce. This is a very rich, indulgent dish...calorie counters beware! :)

Greek Salad V

Excellent and easy to make salad! I didn't measure the spices or oil/lemon, just eyeballed it, and also used fat-free feta instead of regular. Wonderful, fresh taste! It went well with the other foods I prepared in my Mediteranean-inspired meal last night. Looking forward to the leftovers tonight!

Simple Turkey Chili

My BF made this the other night. He followed the recipe exactly and it turned out wonderful! Not too thin ot thick and with just enough spice for zing. I enjoyed eating the leftovers today! It reheats great!

Jalapeno Chicken II

Wow, can I say YUM (and how many times am I allowed to say it?)? This recipe was simple and fantastic. I omitted the itallian dressing marinade step and just rolled up the plain flattened chicken breasts with halved jalapenos stuffed with fat-free cream cheese spread. Wrapped one thin slice of applewood-smoked bacon around each breast and secured with toothpicks. Popped them in the oven for 35 minutes at 375 degrees and then broiled for 5 min. more. FABULOUS!!! My BF couldn't stop talking about them (He loves bacon). Nice flavor and very rich from the cheese. Thumbs up!

Pumpkin Bars I

I baked this late last night since I forgot I was scheduled to bring morning treats for today's weekly meeting at work. I chose this recipe since I had all of the ingredients on hand it had received positive reviews. Well, here comes one more A+ review! The cake turned out great...moist, spicy and delicious. My co-workers couldn't stop raving about it! The only mods I made were to replace the bread flour with AP flour (worked like a charm) and add a bit more spice to it (without measuring): ginger, cloves, allspice, cinnamon and a hearty dash of vanilla. I frosted it with Cream Cheese Frosting II from this website. A perfectly easy bar/cake to whip up on a whim!

Cream Cheese Frosting II

I halved this recipe to frost a 9x13 pan of pumpkin bars (Pumpkin Bars I on this website). Very easy to make, creamy and sweet frosting with a bit of a tang to the taste. Would work well with carrot cake too! Very good.

Spinach and Feta Pita Bake

These are awesome! I have made these twice with fantastic results. Tonight I used lavish bread in place of the pita and I loved how the edges came to a wonderful crisp in the oven! I didn't have any roma tomatoes on hand, but I did have a package of sun-dried tomato pieces, so I used those in place of fresh. I also do not drizzle oil over the top (to save on fat), but its still delicious anyway!!

No Bake Peanut Butter Pie

One word can sum this up: YUM. I prepared this on a whim since I had a PB craving and wanted something to incorporate it into a dessert. I modified this to be low-fat/healthy: I used fat free cream cheese, Splenda in place of the sugar, fat free whipped topping, skim milk and reduced fat chunky peanut butter. I didn't change any of the measurements and was a bit concerned that the 'batter' was really soupy/runny, but once it was in the freezer for a few hours, it set up quite nicely. I actually took it to my BF's parents' house tonight and everyone raved about it! They licked their plates clean! It tasted like a Snicker or butterfinger bar and had the consistency of ice cream...SOOO yummy, this recipe will be a permanent part of my collection!

California Grilled Veggie Sandwich

YUMMMM..didn't grill this (I ended up roasting my veggies in the oven with some EVOO), but it still tasted awesome! I used hearty artisan bread (in individual portions) for the sandwiches and canola mayo as part of the spread. VERY filling and scrumptious...my meat-loving BF even commented on how good they were...next time, I'll definitely try fixing them on the grill!

Red River Beef Stroganoff

I make a very, very similar stroganoff to this, using the same ingredients..its simply rich and delicious! The combination of the butter, sirloin and sour cream literally melts in your mouth. Its way better than tomato-based or ground beef stroganoffs. Since I stopped eating meat recently, I have not made this and wonder if there is any possible way to recreate it, we'll see!

Campbell's® Tuna Noodle Casserole

This was good, for your basic, bare-bones tuna noodle casserole. Kind of bland. But I prefer my bf's version: elbow noodles, mayonaise, cream of mushroom, peas, tuna, crushed ripple chips and topped with cheddar cheese..yummy!

Creamy Ham Turnovers

I've made these a couple times now and they never fail to satisfy! Creamy, warm and delicious1 Its been a while since I used this recipe and have since gone into vegetarian territory, so I'll have to see how they taste without the meat or with a meat substitute!

These are the best around Christmastime! I use Ritz crackers, along with creamy peanut butter and chocolate bark. They remind of the peanut butter patty cookies from when I was a Girl Scout!

Jalapeno Poppers of Champions

All I can about these is YUM. My boyfriend has been making a recipe similar to this for years, whenever we have a party or guests over. He uses a tub of spreadable cream cheese in leiu of a block of cheese. I have never tried it with soy bacon, but now that I've gone mostly vegetarian, I will have to give it a try! These are by far, my favorite appetizer!

Smoked Gouda Mac and Cheese

Despite the iffy reviews, I decided to give this one a shot anyways since I was intrigued by the addition of gouda cheese. I halved the recipe since it was just going to be eaten by myself and my boyfriend (and we are trying to eat healthy). I cheated and made a few modifications: I used 2 oz. smoked gouda, 1/4 cup shredded swiss, and 1/4 c. fat-free shredded cheddar along with medium shell pasta. Cooked and baked as directed. It turned out well..kind of dry, since I used skim milk, but once I topped it with a bit of grated parmesan, it was pretty good. Not the creamy, decadent mac n cheese I love, but flavorful nonetheless. I'll probably make it again and experiment with different cheeses.

BLT Dip

I made this on a whim for a Superbowl party yesterday..used canola mayo, light sour cream, bacon and diced canned tomatoes with chiles. It was OK..the mayo was a bit overpowering and needless to say, no one really ate it. I appreciate the convenience of the recipe, but probably won't make it again.

Refried Bean Enchiladas

I made these tonight with only one modification, in that I added a packet of lower-sodium taco seasoning to the sauce. It was really good! They tasted truly more decidant than what the nutritional information said. I will definitely be making these again!
