Zucchini Oven Frittata
I loved this Frittata. Pretty much stuck to the ingredients except I had no peppers (so added extra zucchini) and I used cheddar cheese instead of mozzarella. Next time I'll saute all the vegetables together rather than cooking the zucchini separately and grate the garlic and leave it in.

Balsamic-Glazed Salmon Fillets
Easy and great tasting. Because I had other things in the oven at a lower temperature, I cooked at 350 for 25 minutes. Came out great

Delicious Ham and Potato Soup
The name speaks for itself. Delicious!! Easy too. Added a little more ham (got lots to use up!) and also 3/4 cup grated cheese to the sauce. Looking forward to the leftovers tomorrow.
