This was good. Next time, I'd probably just mix everything together (instead of doing layers) and pour in to the pan. It would just save some time with probably a similar result. I probably also wouldn't simmer the sauce for so long to cut on time it takes to get it to the table. Worth a try!

These ARE really addictive!! Like others, I used black beans. The flavors (and texture) really work well together. I would have given this 5 stars but even though I followed the recipe, I had way more beans than sweet potatoes when all was said and done. Regardless, this was great and I will definitely make again!
