Curried Red Snapper
Really simple and very tasty dish! I followed the recipe pretty closely, and was thrilled to see how easy and yet tasty this was. I'm sure I'll repeat this basic dish with various twists and turns many times.

Sweet Potato, Carrot, Apple, and Red Lentil Soup
Wow - this was a really wonderful surprise. I wasn't sure how the flavor would turn out with this mixture of ingredients, but the flavor was fantastic. The only change I made was olive oil instead of butter. Definitely will make again.

Fabulous Cilantro Pesto
This is a really good pesto! I substituted toasted pine nuts for the nuts and used a tablespoon of fresh lime juice instead of vinegar. Definitely a keeper to make again.
