Applesauce Oat Muffins
Great recipe! I followed it almost exactly, omitting the oil and replacing it with more applesauce -- they came out moist and went quickly!

Lemon Coolers
Couldn't get these to work out at all --I ended up substituting 1/3 cup oil for the whipped cream, which tasted great.
