Mexican Lasagna
About this Cook
I'm a 26 year old girl living in Norway with my husband, 31, and daughter, 8 1/2 months old. I love being in the kitchen when I have time and when I feel up to it. I love making new foods. And I love sharing my recipes with others.
My favorite things to cook
I like cooking all kinds of foods but I usually stick to Tex Mex, or Mexican food.
My favorite family cooking traditions
I'm not sure if we have cooking traditions yet. But my family loves to make a mexican dish called "Menudo" and "Tamales" for Christmas dinner.
My cooking triumphs
I have mastered my homemade Chili and lots of people have asked for my recipe! I have also mastered my Mexican Lasagna and love it when people ask for the recipe. :)
My cooking tragedies
Eh...I've had lots of tragedies in the kitchen. I learn as I go though. When I first got married and started cooking for my husband I tried cooking exactly like my mother but soon realized that I had to make it MY OWN and not hers. That's one important thing I've learned while cooking the past couple of years.

Sloppy Joes II
Very good! I will never buy the canned stuff again. It's so easy to make at home and you don't have all those unknown ingredients that are added to the canned stuff. =) my picky kids, ages 4 and 2, loved this meal and I figure its a good way to sneak in some veggies, cut up small and mixed in with everything else. Mmm!

Forgotten Cookies II
I've made this. It is very good! I love it! What I did though was just use egg whites, sugar, crushed peppermint sticks, and chopped nuts =) tastes great just like this!

The Best Rolled Sugar Cookies
I just made this today and my cookies came out great! I only made half of this recipe though and I got a total of 50 cookies! More than enough for us! =) I did add a bit more sugar and used parchment to roll it out on. These taste great! I think next time I am going to add a bit of almond extract though along with vanilla. =)
