Pasta e Fagioli II
This was AMAZING! I used a combination of beef consomme and beef broth instead of chicken broth and a couple shakes of hickory flavored liquid smoke instead of prosciutto. It was out of this world (I couldn't stop tasting it while it was cooking)! Thank you for a wonderful recipe.

Chicken with Rice (Arroz con Pollo)
My family loves this recipe - I make it every other week! For more flavor, I add a packet of Sazon seasoning and a few drops of Maggi while cooking the rice and I add capers with the olives,etc. at the end. AMAZING and AUTHENTIC!

Indian-Style Rice with Cashews, Raisins and Turmeric
I made a mistake and used cream of coconut (sweet) instead of coconut milk and my whole family loved it! Then I made it again with the coconut milk and they liked it, but not nearly as much. I personally thought it was too sweet with the cream of coconut, but will try it again using less than a whole can. Thank you for this recipe!
