Whole Grain Waffles
These are fabulous waffles! Light and fluffy while crispy on the outside. I made 9 servings (1.5x original recipe so I could freeze some) only a few changes: less levening (2.5t baking powder, 1t baking soda) and added 1/2 c ground oats (in coffee mill) and used pumpkin (about 1/2c) instead of applesauce. Amazing and my whole family gobbles them up!

Quinoa and Black Beans
Excellent recipe! My husband who doesn't like quinoa as a side dish loves this. I added 1/2 c bell pepper sauteed w/ onion and garlic, 14 oz can diced tomatoes w/ green chilis in place of 1 can of beans, and also added 2 chipotle peppers (about 1 Tblsp) in adobo sauce (from a can). Lots of flavor! Served as entree w/ salad and bread. Thanks for the Yummy recipe!

Spicy Beef Curry Stew for the Slow Cooker
Loved it! I used chicken instead of beef (dredged in flour and browned before putting in the crock pot). Put ginger and small can of jalapenos straight into pot after sauteeing onions and garlic. Also added 1c baby carrots, one sweet potato peeled and chopped and doubled the curry powder. Used chicken broth instead of beef broth. Added canned tomatoes at the end when veggies were all tender. Didn't need more than 4 hours on low. This was great served over brown rice! It had quite a kick and the leftovers are phenomenal!
