Irish Ginger Snaps

Irish Cream Sugar Cookies
We made these for our Culinary Arts class, and could not use the Irish Creme(alcohol), so we substituted Irish Creme coffee creamer(the liquid kind). The texture was great, the flavor lacked a little, but overall, good for a sugar cookie recipe. I would like to try frosting these using the coffee creamer as the milk in the buttercream frosting, to see if the flavor is enhanced.

Awesome Carrot Muffins
I teach Family and Consumer Science and tried this muffin for the vegetable unit we are on. Usually I end up with five different results with just one recipe, but this one turned out the same in each kitchen!! I did follow the other reviews by reducing the powder, soda and salt. I also used the 3/4 c applesauce and 1/4 c oil. Believe it or not, the high school kids that ate this really liked it! Of course I left out the raisins(you know kids), but they were quite surprised at how good they tasted. I will keep using this recipe in class, and at home. I will add the raisins, and walnuts I think!
