Peanut Butter Pie I

Reviewed: Nov. 10, 2008
Excellent and not difficult. I recommend as another reviewer - bake a regular pastry shell and sprinkle with mini chocolate chips right out of the oven. Spread the melted chips over the crust and cool before adding penaut butter filling.

Easy Pumpkin Muffins

Very good and a good recipe to keep in your "back pocket" because it is easy to have the ingrediants on hand. I baked as the recipe stated and the result was very good.

Hummus III

Reviewed: Sep. 29, 2008
This was easy and had a great consistency and wonderful taste. The hardest part was finding tahini in my rural town. I finally found a graocery store that carried it in the dressing/condiment/pickle aisle.

Big Al's Chicken

Reviewed: Aug. 12, 2008
Very moist and delicious. It is great that I had everything I needed on hand. Substituted an egg for the egg substitute. It is similar to our local Kiwanis chicken barbeque. Got lots of compliments at our last cook out.

Baked Garlic

Reviewed: Mar. 9, 2008
Easy was to roast garlic! I recommend baking for 45 minutes. Olive oil works well in place of butter. Sprinkle some sea salt on top. When I use in my warm garlic-bean spread I pour the olive oil in the bottom of the foil into the other ingredients.

Cappuccino Bon-Bons

Reviewed: Nov. 19, 2007
These turned out wonderfully with a true cappucino flavor. I did not have powder so I dissolved instant coffee in the water (used hot tap water), strong brewed coffee would work as well in place of the water/powder. They have a nice presentation when dusted with powdered sugar and the paper did not stick to the brownie when peeled. This recipe is a keeper.

Slow Cooker Chicken and Dumplings

Reviewed: Nov. 19, 2007
Cook those dumplings longer! I would say 2 1/2 - 3 hours. My family loved this dish. I added a bag of frozen mixed veggies with the dumplings and some chopped celery in the beginning.

Artichoke Chicken

This is an excellent recipe as is. I plan to serve it for company with some light sides as it is pretty rich. I like to "adjust" recipes to my taste but this one needs no improvement!

Oven Fried Parmesan Chicken

I used chicken tenderloins and cooked them in about half of the time. They were a big hit with my husband and children. This is a dish that I have used for company as it is simple and something most people will eat.

Chocolate Rum Balls I

Reviewed: Oct. 29, 2007
I made these for a wedding and got RAVE reviews. The regular rum worked fine and if you refrigerate the dough for an hour it is pretty easy to work with. I made my mine a petite size so they could be eaten in one bite. Somehow that makes the texture seem more palatable. This recipe is one I will use frequently.

New York Cheesecake III

This was the perfect cheesecake, and I have made many, many cheesecakes. Do add the T of flour and pat the crust up the sides of the pan a bit. I will use this recipe as my base for specialty cheesecakes now too.
