Easiest Mushroom Sauce

This is easy, and tasty. I made it ahead of time for dinner and put it in the crockette. I thickened it a little more with some cornstarch to serve over bacon swiss burgers.

Peanut Butter Vegetable Chicken Soup

This is a very good soup, better with the addition of cayenne, corriander, and paprika. I used frozen chopped spinach (thawed and squeezed dry) in place of the broccoli.

Broccoli Chicken Stir-Fry

This had a GREAT flavor, but I agree there was just to much liquid. Good thing I'd made some fried rice to soak it up. I also added some fresh minced garlic to the spices.

Mom's Legendary Stuffed Hamburgers

This was a hit with DH! I made this for 2 servings, but made 3 burgers with it. Make sure to really flatten the burgers out so they don't come out round on the grill.

Easy Sour Cream Cheesecake

This is the BEST cheesecake I've ever had. And it is especially awesome since I made it with all fat-free dairy, 2 egg whites, and Splenda! Awesome! I made this into 4 "mini" cheesecakes without crusts, so it only cooked for about 50 minutes. I keep different fruits cut up in the fridge for a different topping every day. Thank you for my new fave!

Ham and Cheese Omelet Casserole

Great recipe here! This was awesome to just pop in the oven while I prepared the other parts of our breakfast. My husband and father-in-law gobbled this up. I made it almost exactly as written, using slightly less ham, and sharp cheddar cheese. Baked for 50 minutes in a round souffle dish. The inside was light and fluffy. Make sure you really "froth" the eggs when you mix this.

Gourmet Grilled Cheese Sandwiches

Had to tweak this quite a bit, per other reviews, but the overall idea is good and the sandwich was really yummy. To make this for myself I used 1 T fat free mayo, 1/2 oz fat free sharp cheddar cheese, and 1 oz fat free cream cheese, and it made a generous amount of filling for regular bread slices. The recipe calls for way to much of everything. I did use the garlic salt and my husband liked it that way. Thanks for the "fancy" idea!

Fried Sweet Potatoes

My sweet potato was about 8 oz. so I boiled it longer. It still took quite awhile to tender while frying in the pan. Next time I will cut the potato before boiling. Tasted good, I eyeballed the other ingredients. Definately turned out "carmelized."

The Best Steamed Asparagus

I was pretty excited to try this, but found it to be kindof blah. I think plain steamed asparagus with salt and pepper is much better. It was very easy, though 3 minutes leaves the asparagus practically raw.

Broiled Tilapia Parmesan

What can I say? There is a reason why this is a top rated recipe...it is delicious! I used non-fat mayo, fresh basil, and fresh parmesan cheese shreds. The sauce was a little to runny so I might use less lemon juice next time. Cooking times were right on.

Laura's Unbelievable Chicken and Pasta

I was pretty pleased with this. I cooked the chicken in water and bouillon granules, along with some white wine vinegar and fat free dry italian dressing, AND fresh minced garlic. The vinegar added quite a bit of tang, but I liked it. Next time I will try plain white wine and some sweet basil. I also used fresh torn spinach instead of frozen, and grape sized tomatoes instead of cherry tomatoes. Non-fat cream cheese as well...it melted great.

Greek Chicken Pasta

This was pretty good. I added about 1/2 cup of tomato puree (made for 2 servings) to make it more saucy, and used less noodles as other reviews said. Added more chicken for extra protein. I also used non-fat feta and whole wheat penne. We are not huge fans of the Greek flavors, but we did enjoy this. Thanks!

Chicken a la King III

Very good! I did a LOT of variation here. I used a red bell pepper instead of green, and I also added diced snap pea pods. I used canned mushrooms instead of fresh and turkey instead of chicken. I did not add the egg yolks, but a bit more fat free sour cream and broth to keep it creamy. No pimentos either, just didn't have any on hand. I used cornstarch to thicken instead of flour. Instead of serving this over noodles or rice, I made mini phyllo pies. It worked really well! Use 2-3 phyllo sheets, each lightly buttered/oiled. Stack and fold the phyllo so it lines a mini pie tin (oiled) and hangs over the edges. Fill with the a la king and fold the phyllo over the top. Bake at 400 degrees for about 10 minutes. Hubby LOVED it and actually called it "hearty."
