Easy Meatloaf

Love it. I make this with turkey instead of beef, because I don't eat red meat, and it's wonderful. I also took the advice of others and sauteed the onions before adding into the mix as well as adding a bit of Worcestershire sauce (which really helps the ground turkey, even moreso than it would help ground beef), but aside from those tweaks I follow the recipe to a T, it comes out great every time.

Strawberry Romaine Salad I

So, I saw this recipe and decided I had to try it. My husband said "EW STRAWBERRY SALAD GROSS!", but begrudgingly agreed to at least try it if I was going to go through the effort to make it. guess who decided strawberries in salads aren't a bad thing? Now, he asks for it all the time. It's surprisingly delicious, and very different from the usual garden salad. Definitely give it a shot if you're on the fence about whether or not to make it.

Juicy Roasted Chicken

This was great. Simple, easy, and delicious. The white meat really does come out moist- I couldn't believe it. Rubbed the chicken down with a smashed clove of garlic (which got thrown into the bird with the celery and stuff) because we love garlic in our house and pretty much use it in everything; other than that one tiny change, followed the recipe to a T. Which means I went out and bought margarine instead of using butter. Next time I'm making 2 birds at a time so we can make soup or chicken salad or something afterward- there wasn't much meat left with one bird because everyone had seconds.

Remoulade Sauce a la New Orleans

Made without the olives or the capers because we hate them both; this sauce still came out excellent. I haven't made it in quit some time due to sheer laziness on my part, but not a week goes by where my husband doesn't mention it. This was REALLY REALLY REALLY good.

Artichoke & Spinach Dip Restaurant Style

AMAZING. Just like the dip we had in the restaurant, only without having to go out to get it. To cut down on fat, I used fat free cream cheese and the "healthy" version of Ragu's alfredo sauce. I've never bothered to roast garlic before, but I decided to do it for this recipe, and I think it was well worth it. It's great. I'm having a little bit tonight, and have portioned the rest out into tupperware containers to freeze and serve whenever I want it. This recipe is definitely a keeper.

Homesteader Cornbread

I'll never buy that boxed garbage corn muffin/bread mix again. This is PHENOMENAL. I had some fine-ground cornmeal on hand and was looking for a recipe to use some of it up in, and I was shocked at the difference between this and the store-bought mix. This recipe made THE BEST cornbread I've ever had.

Grilled Cilantro Salmon

I generally cook my fish with garlic and butter, so this was a welcome change. I thought it might be too weird to eat, what with the eclectic ingredients, but it turned out great. We've made it twice now- once on the grill and once inside on the griddle- and will make it in the future. If you're tired of the same old seafood recipe, this is a nice break.

Addictive Sweet Potato Burritos

Cut the recipe in half, and we had to sub 1 can of black beans for kidneys cause we didn't have enough- these came out awesome. A new family favorite- next time we'll probably quadruple (the recipe instead making only half the recipe there were NONE).

Stuffed Shells I

We mae this all the time. I like a little more garlic, and I use ricotta instead of cottage cheese cause I just can't get past the clumps (yuk). A new family favorite- I've also used the stuffing in lasagna and manicotti as well, all with great results.

Quick Classic Gazpacho

I made this with fresh roma tomatoes instead of canned and it's awesome. Exactly what I was looking for in a gazpacho- I haven't had a decent one in about 12 years now. I htink next time I'll try the canned tomatoes though, just to save on time.

Banana Banana Bread

Excellent recipe- everyone loved it, even the sworn banana bread haters in my house(they don't like the nuts you usually find in banana bread). I added some vanilla and cinnamon, but other than that followed the recipe to a T and it came out perfect. Will definitely make agin- and again- and again.
