Pumpkin Black Bean Soup
Yum! I added 1 tsp. of cumin and chili powder as suggested by others and only used 2 cups of vegetable broth and no ham in order to make it vegetarian. Delicious!

Pesto Pasta
My family loved it. I doubled the pesto and parmesan, omitted the onion, and added garlic as some others had suggested.
