Bruschetta with Roasted Sweet Red Peppers
This was really refreshing and tasty. I halved the basil and added an avocado for color and protein. Excellent!

Eggplant Parmesan II
I really really loved this dish. I made it with the 'Simple Marinara Sauce' recipe from this site. I also prepared some tofu the same way I prepared the eggplant. I added the tofu as a layer for an extra protein kick, and nobody noticed! They thought the "white stuff" was cheese. This was simple, classic, and delicious. Will definitely make it again.

Jacksonville Carrots
Oh my! My boyfriend just ate these carrots at dinner and said, "Wow!" Best carrots ever. The hazelnuts give such a great texture. I chopped my carrots in thick circles, and they turned out GREAT.
