Basic Crepes
I made them GLUTEN-FREE! and they were fabulous! This was my first attempt at crepes and I had NO trouble at all! For the all-purpose flour I used ONE CUP of a gluten-free all-purpose mixture (2 cups white rice flour, 2/3 cup potato starch - NOT potato flour, 1/3 cup tapioca, 3/4 tsp. xanthan gum). It made 10 8" crepes that my picky children and my husband gobbled up! Thanks!

Applesauce
I made this with the preschoolers that I teach as part of an apple unit. They even got to take some home to share with family! Yummy and easy to make! Gina
