About this Cook
I have always loved to cook. I'm one who is not afraid of trying out new complex recipes....and being creative with my old, tried and true. concoctions. I work as a cook for a catering company..I've been catering for 9 years. Got married this year. Actually cooked for my own wedding...(had hired kitchen staff for heating and serving the meal).
My favorite things to cook
I love to make coq au vin, beef burgundy, eggplant parmesan, pad thai, hummingbird cake, and stir fries.
My favorite family cooking traditions
My family is of Italian heritage; so on holidays we have ricotta pie, many types of biscottis, stuffed artichokes, and bracciole.
My cooking triumphs
My cheesecakes, my enchiladas, but especially my tortellini pesto pasta salad, which is loaded with sundried tomatoes, pesto, red onions, extra virgin olive oil and pine nuts. Everyone loves it.
My cooking tragedies
When making a brown gravy....takes me a long time to get it right.

No Bake Cheesecake II
Very good; easy, tasty, and the kids love it when I make this recipe in the mini keebler graham pie crusts. I came across this recipe and realized it's the same one we use in my family. Usually I make an assortment of blueberry, cherry, and pineapple. We enjoy this pie every Thanksgiving.

Apple Crisp II
This is a great recipe. I was looking for the old-fashioned crisp like mom makes and this is it! I've made it twice now; the first time exactly as the recipe's writtten, and the second time I added an extra 1/2 cup of oats, (btw, both times I used regular oats-quick cooking wasn't necessary). Anyway, I got absolutely rave reviews from my co-workers both times. I plan on making this for Thanksgiving.

Blackened Tuna Steaks with Mango Salsa
I grilled this for a barbecue and followed the recipe exactly. I made sure to finely chop all of the salsa ingredients. My entire family loved it! The mango was so good and offset the zing you get from the cayenne. Even the guests that weren't typically big seafood eaters went after this dish. Thanks for the recipe!
