Maple-Drizzled Apple Muffins

Reviewed: Sep. 7, 2009
I'm going to consider myself the aberrant reviewer that didn't like the glaze with these... mine was really goopy and I didn't like the overpowering maple flavor. I was very happy I tried it on a sample before I put it on all of them. Other than that, it was a yummy muffin.

Chocolate Scotcheroos

I've been loving these things at potlucks for years and never new what was in them and that they were so easy to make. I make one change, though. I really, really have a sweet tooth, but I've found that if you cut out a lot of the sugar (I quartered it this time), you can't taste the difference at all. Between the corn syrup and the chocolate on top they were still plenty sweet and perfect.

Gross looking but tastey. I used cumin instead of curry powder like others recommended. I probably won't make it again, but it made for a cheap dinner.

Made this with Tilapia instead of Salmon and the fam raved about it at dinner. Thanks for sharing.

To Die For Blueberry Muffins

Reviewed: Oct. 7, 2008
Very good. I ate 3 right out of the oven, but I liked the ones covered in sugar instead of streusel because the streusel didn't stay on top but melted into the muffin. What worked well for me for those trying to make them a bit healthier w/out losing taste: 1. I made 1/3 of the flour whole wheat without making the muffin too dense or dry 2. I subbed 1/3 of the oil for applesauce without making them spongy.

I think I still prefer your standard brownie, but they are a tasty, rich, change of pace.

Zesty Slow Cooker Chicken Barbecue

We too had the watery problem. I cooked for awhile with the lid off and added some cornstarch and that helped a little. My husband loved the flavor, I thought it was so-so. We'll tweak the recipe and try again.

Pumpkin Smoothie

I thought this was pretty tasty; a lot like a summer version of your favorite fall dessert, but healthier. I think next time I'll make it with vanilla yogurt instead of milk to increase the sweetness and creaminess a bit.

Pasta With Veggies In a Tahini and Yogurt Sauce

Reviewed: Jul. 15, 2008
Don't be afraid of this recipe. I've been intrigued by it for awhile but was concerned about some of the negative reviews. It turned out excellent for me. Some tips that I think will solve other's problems: 1. You don't need water, the yogurt produces a nice creamy sauce without it. 2. If you think it's bland, add more garlic and hot sauce/cayanne. 3. To avoid the curdle problem altogether, wisk the sauce ingredients together and add to the completed dish w/out heating. The heat of the noodles and veggies will warm the sauce plenty. Enjoy!

Fortune Cookies I

Reviewed: Apr. 20, 2008
I made these today for an asian themed dinner party and was really nervous about them being a total bust, but they turned out really well. I would suggest thinning the batter with a bit of water because my early cookies were too thick and never really got your typical fortune cookie crispiness. Other than that, this recipe worked great!

Pumpkin Chocolate Dessert Cake

Overall pretty good. I enjoyed the flavor combo, but I don't know that it will work for everyone. The glaze is excellent, though. Those who say it is gritty might want to try heating it longer and stiring until you're certain the brown sugar has dissolved.

So unique, and I mean that in the best possible way. It's kind of like eating a chocolate covered strawberry, only with little individual explosions of juice. It's definately worth trying.

Simple Baked Apples

Reviewed: Oct. 22, 2007
I was looking for a healthier version of apple crisp and this was exactly what I was looking for. I left the peels on the apples, used whole wheat flour, and used skim milk so I could claim it was a side dish instead of a dessert. It still turned out great! I didn't have any nuts so I tried grape-nuts cereal instead which worked well.

Peanut Butter Fingers

Mmmm yum. I quartered the recipe because there's only two of us and I tend to eat dessert until it's gone. Instead of using 1/4 of an egg, then, I just used an egg white and made it in a bread pan. Turned out great!

Mafioso Chocolate Cake

I made a very amateur mistake in making this: I was lazy and didn't bother to clean the beaters before whipping up the egg whites. So, I didn't get peaks. But the "cake" came out really good. Not cakey, but almost like chocolate bread pudding. Yum.
