Eggplant Supper Soup

Yum! I omitted the macaroni but the stew is fantastic. If you don't have Italian-flavored diced tomatoes, add 1 tbs of Italian seasoning instead.

Sugar Coated Pecans

Yum! So many people have asked me for this recipe. I made several changes like previous reviewers: additional egg white, vanilla, and a tad more cinnamon. I just add the pecans/sugar mixture to the egg white mixture and gently toss until pecans are thoroughly coated. Works just as well as the ziploc method.

Nacho Dip II

The recipe was great but I felt it needed more oomph from the chilies. I'd suggest adding pickled jalepenos or just more hot green chilies (mild barely added any flavor). Layering the dip made for a pretty presentation but the melted cheese created a waxy look to the dip. I made this a second time and just mixed all the ingredients before putting it in the oven. Much better!

Good Old Fashioned Pancakes

I love how fluffy and substantial these pancakes are! Be sure to add 1 tbs vanilla for extra flavor. The one con was that the baking powder flavor seemed a bit too strong, I'm going to try increasing the amount of sugar to 2 tbs next time. Anyone else thought the baking powder flavor was a tad on the strong side?

Pancakes I

I found these to be a bit bland even adding the vanilla and a dash of pumpkin pie spice. These cook up beautifully but like the previous comment, be sure to let the batter sit only mix the matter until combined! I'm still a fan of the "Old fashioned pancakes" found on this site.

Curried Cauliflower

I loved this recipe...I consumed it in one sitting (by myself!) I used the lower fat ingredients for the milk and mayo and it still had plenty of flavor. I increased the curry to 1.25 tbs for more flavor.

Taiwanese Fried Tofu

This reminds me of what my mom used to make me when I was younger (only better, sorry mom!) Reduce the soy sauce a tad just to cut down on the saltiness. You can also use firm tofu..just be sure to drain it ahead of time.

Grilled Eggplant, Tomato and Goat Cheese

I really wasn't impressed by the recipe. I salted the eggplants first and assembled the sandwiches after the eggplant was grilled. I used the Foreman grill and found the sandwiches to be too soft and mushy. Perhaps using a real grill solves that problem?

Connie's Zucchini 'Crab' Cakes

Yum! A few suggestions: salt/drain the zucchini first. To avoid the raw zucchini/onion taste, saute the squeezed zucchini and onion for a few minutes before forming cakes.

Easy Horseradish Dressing

Yum! I paired my crab cakes with this dressing. I'd suggest putting 1/8 cup horseradish first and gradually adding a little more until you find the perfect mix. This way you're not overwhelmed by too much horseradish!

Fantastic mix of flavors! I used red curry paste instead of red chile paste. Double the sauce recipe and the chile part for more oomph! I added onions and broccoli as well.
