Spinach Quiche
Oh my.
First of all I will say that I should have read the "reduce the butter" reviews prior to making this. So my heart is not thanking me right now, but my tummy is soooo happy. :)
The bf was quite wary of the intense amount of spinach in this, but it is just so dang tasty that he didn't mind at all, and even said that the flavors balance out so well that it's delicious.
I left out the mushrooms (don't like them) and used regular feta, couldn't find a deep-dish crust so some of my egg got left out, but it is PERFECT. Oh my. I'm going to have some for lunch, like, right now :)
