About this Cook
I learned to cook from my Mom at a very young age. I lived with four older brothers and always watched her and was her tester. I learned a lot from her and by experimenting and and just imagining what a dish will taste like before I begin will almost always make it come out just right. I never use an exact recipe. I like to experiment and make new or revised recipes each time.
My favorite things to cook
My favorite things to cook: Homemade spagetti sauce with onions, peppers, sausage & meatballs. I also like to make antipasta, potaot salad, macaroni salad, Chuck roast dinners & homade soups. I also love to make homemade wonton soup or french onion soup.
My favorite family cooking traditions
Every Thanksgiving I do a traditional Turkey Dinner with Pumpkin Pie for dessert. Every Christmas I like to make a simple ham, with sweet potatoes, veggies and mashed potatoes. I like to make cheese balls with tuna and cream cheese, spices, onions rolled in nuts. I love to make cookies of all kinds and cranberry crumb squares.
My cooking triumphs
My homade spagetti sauce with meatballs, sausage, peppers & onions.
My cooking tragedies
My first lasagna. It came out like an Italian soup. I was young and I am not Italian but I learned to cook like one over the years because besides seafood, Italian is my favorite.

Swiss Chicken Casserole II
I absolutely loved this recipe because it is easy, healthy and so very tasty. I sprayed the dish with butter cooking spray. I didn't have herb seasoned stuffing so I used regular seasoned stuffing cubes and added thyme, garlic powder & salt and onion powder. I also used half & half instead of milk. I only had one very huge chicken breast so I cut it in half and it was even great to just eat the gravy with stuffing & cheese when the chicken was gone. I think I might make it again this week with more chicken so we can have seconds. Thanks so much for this recipe. If I could give it 10 stars I would **********.

Ricotta Cheese Cake
This recipe is EXCELLENT. When it is warm it tastes like Custard Pie and it is even better chilled. The only thing I changed is I added a splash more vanilla and it didn't even need the powdered sugar. I can't stop eating it and I usually don't eat cake!!! A+++++

Asparagus and Mushroom Puff Pastry Pie
I loved this recipe. I added extra asparagus because it is a fav veggie. I also added cubed cooked chicken. I sprayed the top lightly with butter flavored Pam. It was wonderful and everyone loved it. Thanks!
