Lebanese-Style Tabouli

WE used this as a base and made one with all of the ingrediants except the cinamon and the bulgar. We used quinoa. We love the texture so much better than the bulgar wheat - and we can serve it to our friends who are not able to eat wheat. Thanks!

Firecracker Chili Powder

My husband asked for home made granola yesterday and I had never made it before. I made this and we are so happy with it! I added some nutmeg and used all almonds and walnuts instead of the sunflower seeds and pecans. I will make this over and over! Thanks!

Carmel's Crunchy Pea Salad

This is good, mom's is better. You really can't put the cashews and bacon in too long before serving - cause the texture is just all wrong when they have sat in the sour cream. We always use water chestnuts instead of the boring celery - and the salt and pepper should have measurements - because when you say "to taste" to people and they call the salad too bland - well does anyone else think that could be a seasoning issue? We added enough salt and pepper that it wasn't boring - but really - I have to call mom to get the real recipe, because I remember this being super tasty around her table. Thanks for trying...

Breakfast Sausage

We just made a double batch of these based on all you people's rave reviews. How nice to have doubled it! Now we have patties made and in the freezer ready to toss in the pan for yummy breakfasts! The only change we made was to use half ground turkey with the pork. Yum Yum!

We really liked this. I added fresh pineapple, pears and kiwi to the strawberries. We used non-alcoholic red wine as I had conscientious objectors at my party. For the rum I substituted as follows for each two cups of rum: 2 cups fresh apple juice, 2 T rum extract, 2 T almond extract, 1/4 cup dark molasses. We loved this sangria, and everyone was trying to get me to let them take some home. Fat chance, it is in my fridge.

Gorgonzola and Olive Stuffed Grape Leaves

My husband has held that he would NEVER enjoy Gorgonzola and has turned it down every time it infiltrated his food - but this he loved! In fact, everyone at the party loved this - even those who appeared to be less than enthusiastic about "whatever was in those leaves." Try it! It takes a little time, but isn't hard to wrap up the leaves (they don't tear on you.) Yummy! Intensely yummy!

Mediterranean Greek Salad

Perfect! It made a large batch, so if you are not feeding a whole dinner party, you should modify the amounts as it needs to be eaten within 24 hours of putting together or the cucumbers won't survive. By all means try this out!

Panna Cotta

This was the hit of the evening. It came out of the molds easily and was gorgeous not to mention creamy, rich and decadent. I used 1/2 cup skim, 1 cup heavy cream and the rest whole milk. Also, I used honey instead of sugar to make it meet a friends dietary needs. I would highly recommend the honey! It was wonderful! Even my non-cooking guests desired this recipe and ate every bite after groaning that they had no room for desert! Don't douse it with chocolate sauce, just serve it with a slice of fruit and let the sweet dairy shine through!

Halibut-Mango Ceviche

The flavors were perfect, but learn from my mistake! I used frozen mango, which tasted fine, but didn't hold its shape and got a bit mushy. Not so appetizing in appearance. Stick with fresh, it will be worth it! Also, we used scallops instead of halibut and loved the results!

Mediterranean Salmon

We spread about 2 T minced garlic over the salmon, brushed with olive oil and balsamic (not the whole amount) and covered with chopped fresh basil. We baked without turning instead of broiling. It couldn't have been better.
