Bubble Pizza

My BF and I really liked this, it was something different and it was quite tasty. I added ground turkey and cooked the onion with the meat and I used regular spaghetti sauce. I only used 1 can of buttermilk biscuits in a 8x8 dish and cut them in half then I kind of smooshed them together, then added mozz cheese on the biscuits then I added the meat/sauce mixture on top of that, then I added more mozz cheese on top. Next time I will try different toppings. Yummy!!

French Coconut Pie

I can't say myself if this pie was delicious because I can't stand coconuts. But I made this for my Boyfriend and he loved it. He said it was very rich and flavorful. The only problem was that I made my own pie crust from scratch, but I didn't prebake it in the oven before I added the filling(DUH). So the filling saturated the pie crust and made it a little soggy. But that was totally my fault. Next time I will definitely bake the pie crust beforehand and then it will be perfect.

Blonde Brownies I

I thought these blonde brownies were just okay. To me they seemed a little dry and bland. I followed the recipe exactly except I used white chocolate chips. I prefer a more chewy/cakey consistency and this definitely wasn't it. I like the Blonde Brownies III recipe by Rosina better.

Favorite Old Fashioned Gingerbread

Very tasty cake. I didn't have any ground cloves, but I added a little extra ground ginger for flavor. The cake tasted great except for the fact that it was a little burnt around the edges and the bottom. 1 hour is too long, next time I will check it at 40 minutes, that should be enough. I think next time I will add some cream cheese frosting on top.

Peanut Butter Cup Cupcakes

This cupcakes were very tasty and fairly easy to make. I followed the recipe exactly except I used Whole Wheat flour and they still turned out great. They were crispy on the outside and moist on the inside. The peanut butter cup pressed into the middle really adds a zing to these cupcakes. And they taste great the next day, just pop them in the microwave for a few seconds and they taste like they just came out of the oven. This recipe is definitely a keeper.

Sour Cream Coffee Cake

This cake was absolutely moist and delicious!!! I used whole wheat flour and added some crushed pineapples I had in the frige on top of the cake before I sprinkle the rest of the topping on. I did bake it in a 8x8 pan, so I had to cook it an extra 15 mins. It came out great. Will definitely bake this again, maybe next time I will try a different fruit topping. Yummy!!

Hummingbird Cake I

This cake was pretty good, it has a very unique flavor. I took the advice of others and used 1/4 canola oil and 1 cup applesauce, I think 1 1/4 cup oil sounds like a lot. It was fairly simple to make and I topped it off with Cream Cheese frosting. This cake is worth a try.

Dutch Apple Pie

I thought this pie was pretty good. I found that the crust was more sugary than buttery. It was fairly easy to make since I didn't have to roll out the dough for the crust. I did add some cinnamin and nutmeg just a pinch of each. I did think there was too much of that liquid sauce, it was overflowing in the pie dish, maybe next time I will try a deep dish pie plate. Other than that it is a good basic recipe worth giving a try.

Pecan Pie V

I have never ate pecan pie, so I thought I would try to make one and give it a go. This pie was very tasty and pretty easy to make. I didn't make any changes except adding a little more white sugar(I like a sweet pie). I was a little concerned that it would be mushy because when I took it out of the oven it looked like it wasn't cooked after baking it for 40 minutes. But I let it sit on the counter for a few minutes and thickened up. I used a whole wheat buttery crust I made myself and it turned out just great. Will be making again.

Best Spanish Rice

I thought this recipe was very good. I believe the key is cooking the rice in the frying pan before adding the liquid, this results in the rice being firm and not mushy-DO NOT SKIP THIS STEP. I do think it needs a little more flavor, so next time I will add a little taco seasoning for some added oomph. Other than that this recipe is definitely a keeper.

Butter Flaky Pie Crust

This pie crust was super easy to make and I used whole wheat flour and it still came out delicious. After I mixed the dough I did put it in the freezer for about 20 minutes. This made it a little easier to roll out. I definitely will using the recipe for all my future pies.

Zesty Chicken Meatloaf

I wanted to make something different for dinner and I found this recipe. It was a nice change from ordinary meatloaf. It was very tasty and the ingredients compliment each other very well. I followed the recipe to a tee and it was super easy to make. I will definitely be making this again.

Scottish Shortbread II

I didn't have white flour so I used whole wheat flour and it still came out delicious and buttery. I baked it for about 15 minutes, but it was still kind of soft. Next time I will bake it a little longer so it is crispier on the outside. This recipe is definitley a keeper.

Oven-Fried Catfish

I have to WOW. This recipe was absolutely delicious. I usually do not eat fried food. So when I found this recipe for crispy fried fish in the oven I thought it was too good to be true. But lo and behold crunchy fish that was baked in the oven. I added my own spices to the cornmeal to give it a little more flavor. This recipe was super easy and I will definitely be making this again.

Kentucky Butter Cake

This cake is super delicious!!!! I ended up using 2 cups white flour and 1 cup whole wheat flour because I ran out of the white flour and the cake still came out great. I was concerned because the batter was kind of thick but it all worked out in the oven. There is a lot of sugar in this recipe, but the cake is not too sweet at all. It is just perfect. I used a kabob skewer to poke the holes in the cake and let all the buttery sweet sauce seep deep inside. I think the sauce is what puts it over the top-DO NOT SKIP THIS STEP. I think I am going to get another piece right now. Yummy in the tummy :)

Homemade Mac and Cheese

I was looking for a recipe that doesn't require a fake cheese sauce and I stumbled across this one. I think it is a good basic recipe that will allow you to experiment. I made a few changes. For starters I only used 2 cups of milk, I like my mac and cheese not so creamy, and I used a blend of Sharp Cheddar cheese and Montery Jack. I added some garlic powder, onion powder, salt & pepper and parsley. Instead of elbow macaroni I used whole wheat rotini for some extra bite. I also layered some turkey pepporoni in the center which made it even more delicious and added some more flavor. I really like the idea of adding the toasted bread crumbs on top, I usually would put parmesan cheese on top and place it in the broiler for a crunch topping, but this is much better. Melting the cheeses before mixing it with the pasta is the key to success for this dish. I definitely will be making this again. Yummy!!!!

One Bowl Chocolate Cake III

This cake was very easy to make and has simple ingredients that one would usually have on hand. I scaled the recipe down to 12 servings and it came out great and super moist. It is not sweet so maybe next time I will add a little more sugar. But overall a great recipe that I will definitely be making again.

Quick Chili II

This chili was very good and very easy to make. I couldn't find ranch style beans, so I used all kidney beans and I didn't use the green chiles because I don't like them. This was the first time I have made my own chili(I have made this twice) and it won't be the last. I find that if you leave the chili on the stove to simmer on low for about an hour it will bring out more of the flavors. The last time I made a huge pot and put the extras in the freezer and a few weeks later it was still delicious. Just throw this chili on top of some rice and your good to go. This recipe is definitely a keeper!!!

Louisiana Shrimp Creole II

I used this recipe yesterday and it was quite tasty. I must admit I was a little heavy handed with the Red Pepper Flakes, so it was extra spicy. I like it spicy but my boyfriend had a hard time, there was a fire in his belly. Will definitely make this again but next time I will take it easy with the flakes. Yummy!!!

Parmesan Puffs

These puffs turned out more like little lumpy biscuits. They were not puffy at all, maybe I did something wrong. I did use Fat free milk, but maybe I was supposed to use regular milk. They tasted good, but they did not look like the picture. I will try this again.
