Cheddar Artichoke Quiche Cups
The first time I made this, I followed all of the directions and thought it was pretty good. However, this time I decided to cut back on some of the fat and cholesterol. Instead of 4 eggs, I used 1 1/4 cup egg replacer. I only used one 8oz bag of cheese, which was plenty. Instead of cheddar, I used reduced fat monterey and colby cheese. I also added 1/2 a package of frozen spinach. I defrosted and drained the spinach. I added 1/2 cup chopped mushrooms. It turned out great!! Even better than the original recipe and better for you.
