I have a wonderful husband who've I've been married to almost 4 years and two gorgeous children. Hannah is 2 1/2 and William is almost 1. I am passionate about providing well balanced, nutritious, delicious meals for my family, and I love making everything from scratch. I am a stay at home mom and love being able to raise my kids in a God-loving environment.
My favorite things to cook
I love baking!!!! It's fun to challenge myself to take a cookie recipe, for example, and tweak it into a healthier version that still tastes great. I pretty much enjoy cooking all around, although I don't fry my foods and am not very skilled at preparing meats.
My favorite family cooking traditions
The day after Thanksgiving, my mom, aunt and I have always started our Christmas baking. Instead of store-bought presents we give out baskets of cookies, candies, breads, and such to our family and friends. Since I've moved away from Washington I have started this with my daughter, who already shows an interest in cooking and baking.
My cooking triumphs
I make the BEST whole wheat banana bread and a pretty good darn chicken enchilada soup. My husband likes my teriaki chicken as well.
My cooking tragedies
I'm finally learning to make my mom's cinnimon rolls. Hers are so large, soft, and perfect and mine were hockey pucks. I'm also learning how to prepare red meat (like steaks and roasts). I have made some pretty tough meat before...

Alfredo Sauce
This was a great, basic alfredo recipe, much better than others I have tried. I altered it slightly, adding three cloves of minced garlic to the butter for about 2 minutes, before stirring in the cream, cheese, etc. I also threw in some chopped fresh spinach towards the end. I had earlier diced fresh chicken and cooked it up in a little garlic, salt, and pepper, and then added this in right at the end to warm it back up again. It was wonderful! My husband, who isn't a huge pasta fan, asked for seconds and even took it for lunch the next day!

Best Brownies
I am an excellent baker and these brownies were dull and dry. I'll stick to my other recipe.

Simple, Classic Chicken Potpie
This is a wonderful recipe, I served it when company came over and was surprised when we didn't have any leftovers!!! I roasted my own chicken and I also made my own crusts, which added to the already great taste of the pies. I used frozen baby sweet peas and fresh baby carrots (which I diced pretty small), which gave the meal a naturally rich flavor. Although it took me a bit longer to put together because I did my own chicken and crusts, it's the perfect Sunday dinner!
