Cheesy Polenta

Loved it - a nice side dish change from mashed potatoes. Used chicken stock instead of water as others suggested and used skim milk since that is the only kind we drink. Also substituted parm. cheese for the cheddar. Added corn meal to liquid then boiled - cooked much faster this way! Will make again.

Turkey Burger Pie

Blah! I made exactly as recipe reads. Stuck to pan and fell apart while hot- came out better after letting it set about 8-10 min. after cooking. Easy to prepare, but lacked flavor! Better w/ some hot sauce on it, but I wasn't impressed enough to make this again.

Baked Potato Soup

LOVED IT!! I cooked a pound of bacon and finely chopped a bunch of green onions. I saved the green tops to put on finished soup. The white parts went in with the garlic and onion. As others have done, I cut the basil down to 1/2 tsp. and used 5 tbsp. of flour and added two 14 oz cans of chicken broth. I diced 6 smaller potatoes and cooked them until tender in the broth, then mashed them slightly to make soup creamier. I added about 1/2 to 1 cup of reduced fat sour cream and used about 1 cup of fat free half and half. I didn't have any tabasco so I used a small pinch of cayenne. We topped bowls with the green onions, cheddar cheese, bacon and a dollop of sour cream. YUMMY!

Pat's Baked Beans

I made as directed except I used a pound of bacon. I cut into small pieces,cooked it and added half into the beans. During the last 10 minutes of cooking I sprinkled the remaining bacon on top. Made for a nice texture. May cut down on molasses and sugar slightly next time and cook a little longer (about 20 min) but it is a good, solid recipe.

Too Much Chocolate Cake

OMG is this cake good, and as so easy to make and clean up after! I used about 1/4 less oil than the recipe called for and used the mini chips as others suggested, but it was plenty moist. I dusted with powdered sugar (I think a chocolate glaze would have made it to sweet for me) Will make again!

Beth's Spicy Oatmeal Raisin Cookies

Made exactly as recipe reads. I thought they were good, but not great. They were better when still warm and also better right out of the freezer. Probably won't make again since family prefers my other cookie recipes.

Baked Salmon II

I cut the oil down to 1 tbsp and added 1 tbsp melted butter. Strong flavored marinade, but yummy. My hubby doesn't like salmon and the marinade takes away from the fishy taste.

Tasty Green Bean Casserole

I was going to rate this 2 stars, but some people ate it. I made this for the first time on Easter. I'm glad I warned everybody that I was experimenting with a new recipe! It says to put the fried onions on before putting it in the oven. I put them on after it had been in for 15 minutes and I'm glad I did. After 10 minutes,they were very dark. Besides this, I made it as the recipe reads. I found it bland and I agree with others that the cheese was unnecessary. At the end of dinner, I noted that guests had eaten everything on their plate EXCEPT for the green beans. Nobody wanted to take any of the leftovers home. That told me all I needed to know. Will go beck to the traditional dish next year.
