Cheesy Polenta
Loved it - a nice side dish change from mashed potatoes. Used chicken stock instead of water as others suggested and used skim milk since that is the only kind we drink. Also substituted parm. cheese for the cheddar. Added corn meal to liquid then boiled - cooked much faster this way! Will make again.

Turkey Burger Pie
Blah! I made exactly as recipe reads. Stuck to pan and fell apart while hot- came out better after letting it set about 8-10 min. after cooking. Easy to prepare, but lacked flavor! Better w/ some hot sauce on it, but I wasn't impressed enough to make this again.

Baked Potato Soup
LOVED IT!! I cooked a pound of bacon and finely chopped a bunch of green onions. I saved the green tops to put on finished soup. The white parts went in with the garlic and onion. As others have done, I cut the basil down to 1/2 tsp. and used 5 tbsp. of flour and added two 14 oz cans of chicken broth. I diced 6 smaller potatoes and cooked them until tender in the broth, then mashed them slightly to make soup creamier. I added about 1/2 to 1 cup of reduced fat sour cream and used about 1 cup of fat free half and half. I didn't have any tabasco so I used a small pinch of cayenne. We topped bowls with the green onions, cheddar cheese, bacon and a dollop of sour cream. YUMMY!
