About this Cook
Right now I'm a stay at home wife who enjoys reading, cooking, blogging, and working on any of my many projects. I only really started cooking after I got married, but I quickly found my stride. I've become one of those people who rarely measures anything or sticks to any one recipe. However, I often use Allrecipes.com as a place to get inspiration. I'll read several recipes, and then throw my own thing together. So far it's worked pretty well.
My favorite things to cook
I really like one-pot meals like the kind my husband and I both had growing up. They make great left overs on the days when I spend a little too much time on the couch reading :D Some of our favorites are veggie soups, meatloaf, pasta, tex-mex inspired, and Southern style foods.
My favorite family cooking traditions
Hmmmmmm, my mom makes fabulous bread, but unfortunately that's not something I've been able to keep up with myself. She also makes wonderful pancakes and biscuits every weekend. I really loved weekends growing up, and hopefully that's something I'll be able to pass along once we have kids.
My cooking triumphs
Every time my husband says he's enjoyed a meal and he's grateful I'm such a good cook is a triumph. Other than that, just going from being scared and feeling incompetent in the kitchen to feeling confident and creative in under a year has been a wonderful achievement.
My cooking tragedies
Chocolate chip cookies -I'm not good at making any sort of oatmeal or chocolate chip cookie. They turn into some sort of dried out wafer. I can't say I understand why.

Chicken Pot Pie IX
I was looking for a chicken pot pie recipe that didn't use canned soups for the sauce, and this recipe was perfect. I did make a few minor changes -added some sliced mushrooms, garlic powder, and used homemade stock. I ended up cooking all the vegetables at once and then making the sauce as usual. As suggested cooked at 375 for 45min, and the result was just lovely.

Baked Potato Soup
Although I didn't have baked potatoes on hand and used boiled potatoes, this recipe is wonderful. Only problem was that I ended up with too thick a mixture. The flavor, though, was outstanding.

Cajun Chicken Pasta
Maybe I used a bad seasoning brand because the chicken really didn't do it for us. The pasta, on the other hand, really was wonderful.
