Quick and Easy Green Chile Chicken Enchilada Casserole
hmmmm, I know I made some mistakes, for example, I wouldn't cook the chicken that way again. Also I had some difficulty with soggy tortillas, I did not char them. I think it needs more specific directions, for example, what size pan. I'm not sure why it called for 18 tortillas, didn't come close. Anyway, this is a good starting point, but overall I found the dish very bland, perhaps the sour cream mellows it to the point where you need to over spice it, I'm not sure. One thing I know for sure, I didn't miss rolling up enchiladas.

Grilled Salmon I
Made this for company & my husband who were all skeptical of the brown sugar. My husband loves salmon with butter & dill, my guests make it with soy sauce and lime. They all agreed this was the BEST! We don't give out 5 stars easily, this was well deserved, thank you! Followed recipe exactly.

Blue Cheese and Pear Tartlets
I couldn't find phyllo mini cups so I had to make them out of regular sheets, so I cut & buttered 5 sheets for each tart, very time consuming. You must undercook tarts so they don't brown too much. I don't know if I did something wrong, but these were completely inedible. I had honey & diced pecans & candied pecans near by but decided it wouldn't help. Sorry, thought the combo would be great, maybe a canned pear would be sweeter.
