Apple Muffins
I would suggest cutting the apples into chunks and then a cup would be fine, but I used 2 cups of finely diced apples. I also did not have an egg once I started making these and I substituted 2 tbsp. of applesauce and the muffins still turned out great. They are moist, but I don't like mine dry.

Ragu(R) Upside-Down Deep Dish Pizza
This recipe was easy enough, but I used spinach in mine. The spinach tasted like dirt, but maybe it was just the brand I bought. I did use crescent rolls instead of pizza dough because that's what I had on hand. Everything but the spinach was yummy, but it doesn't taste like pizza. I think I would substitute pizza sauce for the spaghetti sauce next time, and maybe try it with the broccoli.

Bavarian Apple Torte
This recipe was not as good as I hoped. I did follow the recipe exactly except I precooked the apples in the microwave for about 3 minutes like other reviewers suggested and they turned out great. The filling, however, was the problem for me. It probably should only have one egg or one egg plus an egg white. The filling had a very eggy taste that was not appealing for me. I don't think I'll try this recipe again because of that. If you do make this recipe consider cutting down the egg or substituting it altogether. The dessert was beautiful, though, so I had high hopes for the flavor. Texture was good, just way too eggy as written.
