About this Cook
i'm married to a wonderful man and we have a beautiful 3 year old daughter and a son on the way. we also have a 7 year old rotweiller who is like a 2nd daughter. when i get free time, which is rare, i like to crank the tunes and spend some time in the kitchen preparing wholesome meals and snacks (and some not so wholesome but still yummy!). My daughter and I love to spend time together baking in the kitchen, she's turning into quite the pro! i like to experiment with new recipes. Aside from cooking my interests include music, photography, outdoor activities (camping, hiking, etc...) and art (tattoos).

My cooking tragedies
once, a long long long time ago i was baking a cake for my mom for her birthday (i was about 14). i forgot to add the eggs and it turned out hard as a rock!!!!!!!!!

Mini Cheesecakes III
these are delicious and very easy to make! i doubled the recipe and had enough cream cheese mix for 18 cupcakes but only enough crust mix for 12 so i had to make a little more of that. i used paper liners for the muffin pan and it makes it really easy to eat the cakes (since my crust was a little crumbly). i topped them with some cherry pie filling and they're scrumdiddilyumptious!

Water Chestnuts Wrapped in Bacon
i let the water chestnuts marinade overnight. these were a huge hit at our superbowl party they were gone before we knew it! great recipe.

Portobello Penne Pasta Casserole
i made this on two different occasions and we just didn't like it. to me the tastes don't blend well, with all the mozzarella it's too gooey and i don't like the sauce because even with seasoning it lacks flavor. i probably won't make this again.
