About this Cook
Single mom of 2 kids. Commute about an hour and a half each way to work so I dont have much time for cooking meals that take time.
My favorite things to cook
Since the kids are picky, its basically chicken, steak and hamburger meat. So I am enjoying using the quick and easy section to find new stuff to make with my "wide range" of meat to use. :)
My favorite family cooking traditions
We make Gullivers Corn for any holiday meal and my mother always burns the brown and serve rolls.
My cooking triumphs
Oh, too many to list. JK I just dont feel like listing them all. :)
My cooking tragedies
Oh lets not even go there.... LOL

Italian Style Pork Chops
This is a great recipe! Even my boyfriend who's italian, said that they tasted just like grandmas. The only thing that I would change is the mixture made WAY too much. Id cut the parm and crackers in half and for some reason, it took my chops 1.5 hrs to cook, not 30-40 minutes.

Chicken and Red Wine Sauce
I followed the recipe exactly and we all loved it! Even the kids were wanting 2nds! I was hesitant because I dont like the taste of wine but the brown sugar toned it down. Very yummy!

Beef and Bean Chimichangas
I changed up the recipe a bit since I am allergic to beans. I fried up the hamburger meat, added garlic powder , onion powder and chili powder to taste. then i just put the meat, then some taco bell hot sauce packets (kids request) and monterey jack cheese. rolled it up, basted with butter and baked it. i garnished it with some lettuce and a spoon of sour cream. my kids loved it and i didnt expect them to!
