Flatlander Chili
Not only easy, but delicious. OK, now for the "slight" changes. We enjoy a thicker chili, so instead of tomato juice, I substituted 2 14.5 oz. cans of stewed tomatoes. Substituted 1 16 oz. can of tomato sauce and left everything else the same. Seasoning were just right. Again, delicious AND hearty!!!

Scalloped Potatoes and Onions
Really good. Tastes even better the next day. I liked the fact it called for chicken soup instead of milk. Will definitely make this again. I did lightly salt & pepper each layer of potatoes and onion. Just added 1/2 the salt called for in the sauce.

Pistachio Fruit Salad
In addition to the mini marshmallows, I added a 1/2 cup of chopped pecans for a little crunch. Everyone loved it.
