This recipe was perfect, as is, for us! So quick and easy! Wasn't dry at all and it was light. Next time I might add some fruit topping and cream cheese frosting drizzle

Microwave Mochi

So easy! I added coconut extract and hydrated purple yam powder! Corn starch worked just as well and I left out the vinegar. My kids love this treat. Especially my one year old. I had to let it cool before rolling into a ball. So sticky.

Fresh Blueberry Pie II

I followed this recipe exactly and it turned out so yummy with the fresh blueberries! I am just confused as to how to put the lattice on top since the pie did not finish in the oven.

Crispy and Creamy Doughnuts

I made this with my kids. They had so much fun making them. My daughter said they were the best doughnuts she ever had. I ran out of milk so I had to use the rest of my fat free half and half and vanilla soy milk. Yummy!

Angel Salad

Very good. My 11 year old daughter made this for me for Mother's Day! She did a great job. I would have left out the celery and added mandarin orange instead. Everyone picked out the celery. It was a bit bitter but we liked the crunch.

Apple Streusel Muffins

These muffins were so easy and yummy. I added maple glaze on the top of the muffin after it cooled. Next time I make them I will probably use more cinnamon in topping. I will also add applesauce for moisture and 1/3 butter instead of 1/4.

Tom Ka Gai (Coconut Chicken Soup)

This recipe is awesome. To prevent curdling of coconut milk keep soup at a lower temperature. I kept it at 200 degrees. Do not bring it to a boil. Also try to stir continuously. I added thai chili sauce instead of cayenne, canned straw mushrooms, a pinch of sugar, low sodium chicken broth instead of water, 2 tbs of soy sauce with fish sauce, lime slices. I did not mince the ginger I cut it in visible slices so that you could pick them out. I did not use turmeric. It tasted just like the tom ka at my favorite Thai place. With a brand new baby it's hard to go out to eat so I am so glad that I could recreate this soup at home with the help of this recipe!

Butternut Squash Soup

Bread Pudding

This recipe is so yummy. I made 2 loaves of homemade french bread the night before. I thought I would make bread pudding with the day old leftover bread. The family loved it. I followed the direction for the bread pudding exactly, but I made two sauces. For the cream sauce I used 1 cup of heavy cream & I reduced the sugar to 1/2 cup. I also made a caramel sauce with brown sugar, butter, and a little cream. I topped the bread pudding with a combination of the two sauces.

Honey Bran Muffins

This recipe is great. I followed the recipe with a few substitutes. I used apple juice instead of pineapple juice, whole wheat flour instead of allpurpose and I used Raisin Bran Cereal. With the cereal, I separated the raisin from the bran flakes then followed the recipe accordingly. These are great in the jumbo muffin pans. When I took them out of the oven to cool I smothered the tops with honey. In the morning at room temp they were nicely moist with honey. Great with a cup of joe.
