Chicken Enchiladas
Very good. Excellent way to use up leftover chicken. Very creamy/cheesy/saucy.

Chicken Tortilla Soup I
Wonderful soup. Not like the first chicken tortilla soup I had in Mexico, but the best this side of the border. I actually cooked my chicken breasts in the onions, garlic, and tomatoes until cooked then took them out, chopped/shredded, and returned to the pot. Alterations: I used what I had on hand (no hominey), frozen corn, my grandma's canned stewed tomatoes, canned jalapenos, and crushed blue corn chips on top. Don't skimp on the black beans or corn! Very filling and very tasty.

Simmer Family Turkey Stuffing
Very good. I wans't sure it would be okay seeing as there is no broth to keep it moist. But it was moist. I used thyme, sage, salt and pepper as the seasonings. Turn out great. 4 stars because my husband said it was slighty eggy and it is not as good as his mother's recipe (which is the best stuffing I've even tasted - it's made with a loaf of bread that is called Turkey Time it is baked with seasoning it it, can only find it in Canada).
