Lentil and Sausage Soup
This is a great recipe. It makes a ton. I gave some to a friend and froze some, but still had enough for a few meals for two. I didn't add any of the optional pasta because I didn't really think it needed pasta with the beans. I rarely ever keep a recipe the way it is, but I didn't alter this recipe one bit.

Curried Coconut Chicken
This recipe was good- but not great. I would make it again but with some changes. The sauce did not thicken really. I put some flour into it towards the end, it thickened a bit. I think next time I will not add the tomato sauce, just the crushed/diced tomatoes. I added some diced butternut squash. I thought the squash was a nice addition, and after 30-40 minutes of simmering the squash was perfectly tender. Next time I will add red pepper flakes for some more kick.

Moo Shu Pork
I think this is a wonderful dish, but I made some significant adjustments of my own and some suggested by other reviewers. These were the changes: 1.) I slow cooked the pork in chicken broth, bbq sauce, soy sauce, hoisen sauce, ginger, and garlic for 6-7 hours on high. No cornstarch and no water. 2.) For the sauteed mixture I mixed the following ingredients: cole slaw mix, sliced shitaake mushrooms, bean sprouts, minced ginger and garlic, 1 tablespoon oyster sauce, 1/4 cup soy sauce, 1 tablespoon sesame oil, 1/4 cup of hoisen sauce, and some of the leftover juices I had in the crock pot. My boyfriend prefers it with just white rice, but I prefer it with the tortillas. It made enough for dinner and lunch for two!
