About this Cook
I'm 32. I've been cooking since I was a little girl. I remember coming home from school and making a snack in front of an "audience". I'd say things like, "I already have one made." And pull the peanut butter and jelly sandwich out of the oven. I'm married and have a daughter, Josephine. She is 19 months old and at a great age where I can introduce new meals to her. I don't want her to be a chicken nugget kid.
My favorite things to cook
Casseroles, frittatas, baked italian meals, quick and easy inventions
My cooking triumphs
Every once in awhile I get lucky and make something terrific. I quickly add it to my recipe box as something my husband and daughter loved. Then when I'm in a pinch for something tasty, I pull out those "successes" and make those.
My cooking tragedies
I once made an omelette for a guy I was dating. I tried to get fancy and put some different herbs into it. I made it. Served it. And after I took ONE bite I realized what I did. I PUT LEMON PEPPER in my eggs!! YUCK! He was very gracious and tried to choke it down. I felt like such a blockhead.

Italian Salad Croutons
Made it with sour dough bread, real butter and "McCormick Italian Herb Seasoning" (the grinder) it was perfect! 325 for 25 minutes but my bread cubes were larger than 1 inch. Chewy on the inside, crunchy and flavorful outside!

Ham 'n' Egg Casserole
Delicious but I would call this a Ham & Egg Strata. --DIY chef Margie Potts calls a Strata "a southern dish that falls somewhere between a family size omelet and a crustless quiche." Either way this recipe is great and easy. I used jarred pimentos because my family doesn't like green peppers.

Sarah's Banana Bread Muffins
Delicious. However... She mentions coconut twice in the descriptions and it's NO WHERE in the recipe or directions. I used 1/2 cup mini choc. chips instead of walnuts. I also used whole wheat flour instead of white. She mentions using "muffin cups in muffin tins". I believe she meant paper cupcake cups. I used them. I highly recommend them. No clean up! I had more than 12 cupcakes though. (20 mins at 350!) So I sprayed PAM in a ramekin and put the rest in it. (25 mins at 350 cuz it was bigger.) It was delicious with some ice cream warm out of the oven.
