I live in Dallas, Texas. I have a wonderful boyfriend named Kevin. We love to cook, eat and drink. He's a great cook and bartender. We also love to go out to all the great places Dallas has to offer.
My favorite things to cook
I love to make casseroles, some baked goods, Mexican foods and LOTS of Pasta dishes. YUM!
My favorite family cooking traditions
Not many these days since my grandparents have passed. I used to love the Italian and Czech dishes they made. Also miss my grandmother's bisquits and gravy she always made when I visited her and my grandpa's wonderful steak and baked potatos.
My cooking triumphs
I made a fabulous carrot cake from Simplyrecipes.com. I made it for guests and they were floored. I felt so proud, I know it was just a carrot cake but it was beautiful and good! I made a great brunch for the recovery dinner after my brother in law's 50th birthday too which was well received. Because I love to cook so much I've had lots of success lately, and that gives me more confidence in the kitchen.
My cooking tragedies
When I was a teenager I tried to make mashed potatos. They came out as cold potato soup. I guess I didn't know I had to heat the milk and butter and I poured it in too fast. I learned my mistake and now make fabulous mashed potatos.

Cherry Crunch
This was very good. Took another reviewer's advice and used a bag of frozen dark cherries and a can of tart pie cherries and mixed those together with no sugar and put the crust only on the top. Served it with ice cream. Very easy and flavorful dessert.

Black-Eyed Pea Gumbo
Absolutely wonderful gumbo. Followed as written just added Tobasco at the end. It gets better the next day as the rice and veggies get softer and the flavors settle. It makes a lot but we made it meatless, pretty figure friendly. My boyfriend said he wants me to make it again in the future and add scotch bonnets for heat. Thanks for the great recipe.

Cottage Cheese Chicken Enchiladas
Wonderful! Been wanting to make these for a long time, finally did tonight for dinner. Followed another reviewer and slow cooked 3 chicken breasts with 1/2 a beer, cumin, garlic, pepper and cinnamon. Then followed the recipe as written. Wow, it was so good. The cottage chesse mixture melts into this rich creamy filling that is amazing. Wow. I'm so proud of this dish and will make again.
