To Die For Blueberry Muffins

These were good. Way too much butter and WAY too much of the sugar mix that you put on top. I would cut those ingredients back to 1/4 a cup next time!

Wild Rice Harvest Casserole

Reviewed: Dec. 21, 2009
This was really really good! I prepped it early in the day to allow for the 1 hour 45 minute cook time. I wanted to put in the dried cranberries, but completely forgot to. The end product was amazing! I used fresh mushrooms as that is what I had on hand. It was a little dry at the end so I added some extra broth. I don't think I'll cook it as long next time. GREAT winter comforting dish, can't wait to make again!

Chicken Enchilada Dip

Reviewed: Dec. 17, 2009
It was good but I made a few changes. I used 8 ounces of green chile peppers, added a can of rinsed and drained black beans, and added about half a packet of dry taco seasoning. With these changes it turned out amazing!

Christmas Breakfast Sausage Casserole

OK, so I'm not a big egg casserole fan...but this was really really good! It was so easy, the only change I made was to use 6 eggs and did not add the dry mustard. Assembled in the night before and just popped it in the oven that morning. Looking forward to making again. GREAT RECIPE!

This turned out great! I boiled the chicken in chicken broth then cooked the noodles in that same broth. I added peas, carrots, celery and onions to the mixture. This made a ton! Delicious!

Stuffed Filet Mignon Bites

Reviewed: Feb. 14, 2009
Turned out great. I was hesitant to use a filet Mignon, but glad I did, it was so tender and easy to work with. The bacon didn't get crispy enough for us, so we ended up taking it off before eating, but end result was still amazing. Glad I tried this one out!

Baked Ziti I

Reviewed: Feb. 3, 2009
This was great! Gave it four stars because I made the following changes: used hot Italian sausage, used half ricotta cheese and half sour cream, didn't really measure it out. Provolone cheese is a must! Made the night before we went skiing and ate it after we got off the slopes, got rave reviews and feed 8 people! Thanks for a great recipe.

Seven Layer Taco Dip

This was ok, not the best ever. Too much taco seasoning in the refried beans. I left off the lettuce. Probably won't make again.

Turned out great! Made it for our super bowl party and it didn't last long. I love that you can change up the toppings to fit the crowd. I served it with cut up pieces of texas toast. GREAT recipe!

Cajun Chicken Pasta

Fabulous! I added a good amount more cajun seasoning to the chicken than the recipe called for, we love it spicy! Used one red and one yellow pepper also used fresh garlic instead of the garlic powder. SO DELICIOUS!

Chicken Tequila Fettuccini

Reviewed: Jan. 4, 2009
This was absolutely amazing! I'm so thankful that I tried it! A few changes: 1. I marinated the chicken for about 2 hours in a mix of soy sauce, lime juice, olive oil and tequila, about 1 or 2 tbspoons of each. 2. We love spicy..and reviews said the heat from the japs cooked out. So I used 4 jalapenos and 1 haberno. It was perfect for our taste and we could even go spicier. 3. I added a little more cilantro, as we love that too. 4. Only used half the pasta called for, the amount of sauce was perfect. I prepped everything about 2 hours in advance and just threw together when I was ready to eat. The cilantro/japs/tequila mixture takes about 15/20 mins to turn into a paste, be patient with it. Can't wait to make this again, my husband raved!!!!!

Boilermaker Tailgate Chili

Followed the recipe to a T, let it cook about 3 hours and turned out good. Don't get me wrong, it was good, but I guess all chili tastes the same to me. I could get the same chili in a much shorter time. All in all, great recipe, but will probably stick to my quicker recipe.

Chuck's Favorite Mac and Cheese

Reviewed: Oct. 16, 2008
Very very tasty! This was exactly waht we were looking for in a mac and cheese! I made the following changes, sauteed half of an onion in butter and garlic, added it to cheese mixture. Used a food processor to puree the cottage cheese. Added a 1/2 cup milk, used 1/2 cup bread crumbs and less butter. Mixed all the ingredients together on the stove before putting in oven. Added some hot sauce and red pepper flakes to the mixture. Added some chopped cooked bacon on top of the breadcrumbs. YUMMMMM!

Chicken Pot Pie IX

Reviewed: Sep. 8, 2008
Wow, this was amazing! I used pie crusts from the frozen section and was a little worried but they worked perfect. Based on other reviews, I baked mine for 5 minutes on 325 (after poking the bottom w/a fork). I never thought it was all going to fit in but it all did, and no sauce squeezed out! You do not need to double the sauce recipe, unless you have a giant crust, leave as the recipe states!

Zucchini Parmigiana

Reviewed: Jul. 31, 2008
I'm on the low carb diet and being an Italian girl, it's killing me! But this recipe was great because I felt like I was getting my big pasta meal! So easy to make, and a great way to use up the extra zucchini from my garden. I added more cheese (hey, I'm not eating pasta!) and more sauce, and it turned out FANTASTIC. I also added some sauteed onions to the ricotta mixture and used all fresh basil, oregano and parsley. Totally worth your time to make this. Thank you for a GREAT recipe!

Connie's Zucchini 'Crab' Cakes

Reviewed: Jul. 30, 2008
Fantastic! So easy to make, the prep time was only a few minutes! After grating the zucchini I put it in a dishtowel to ring out all of the water. That is a must. I doubled the Old Bay seasoning and that was perfect for my taste. Instead of frying them, I baked them for about 10 mins on 375 then broiled them. I will be using all my extra zucchini this way!

Slow Cooker Guisado Verde

Reviewed: Jul. 22, 2008
I didn’t know what to expect of this dish, but I love tomatillos, so I had to try it! First, I used 2 lbs of pork roast, what I had on hand. Store didn’t have canned tomatillos, so I used the Salsa Verde. Based on other reviews I used a 12oz bottle of beer in place of the water and also added two cans of white beans so I could eat it as a stew/soup. I let it cook on low for 8 hours, then shredded the pork and put back in the crockpot for about an hour. Turned out fantastic! I like my dishes spicy, so next time I’ll add some hot sauce or crushed red pepper, the japalenos didn’t make it spicy enough for my taste. Turned out great, can't wait to eat the leftovers tonight!
