Chewy Peanut Butter Chocolate Chip Cookies

The flavor of this cookie is good. I used 1 full cup of peanut butter instead of 1/2 cup. I think with 1/2 cup there wouldn't be enough peanut butter flavor. My cookies were chewy when they came out of the oven, but the next day they were not. I was hoping for them to stay chewy.

Savory Cheddar Zucchini Muffins

I left out the bacon and maybe that is what was wrong with this recipe. Seems like something is missing. The muffins were rather bland.

Jalapeno Popper Spread

I made this as a cold dip and it was delicious. I didn't have any jalapeno peppers on hand, so I used about 2 tbsp. of chili puree with garlic to give it the heat. I also doubled the amount of green chiles I used. I used light cream cheese and mayo. I served with tortilla chips and toasted pita crisps. I'll try it hot next time!

Spiced Baked Apples

These were great! I used apple cider instead of the water and poured some cream over everything before putting in the oven. Delicious. I think it depends on what kind of apple you use as to how long you need to bake. I used Jonathans and they were done in less than 30 minutes.

Swiss Chicken Casserole II

I liked this recipe, but I changed it a little bit. I put the stuffing mix on the bottom of the pan and mixed it with some hot water to make it moist. Next I put my chicken which I cut into cubes over the stuffing mix. Topped the chicken with swiss cheese, then poured the soup/milk mixture over the top of everything. I sprinkled some more stuffing cubes on top and then some more swiss cheese. Baked in the oven & it turned out great! I used cream of chicken soup with mushrooms and I left the butter out, didn't think it was needed.

Roasted Chickpeas

I used canned chickpeas, drained and rinsed them, then placed them in a foil baking pan. Roasted them in the oven at 400 degrees for 30 minutes. I took them out of the oven, sprayed them with cooking oil spray and sprinkled some sea salt over them. I put them back in the oven, lowered the temp. to 350 and baked for another 30 minutes. They turned out crunchy for me. I just used salt, but would like to experiment with different seasonings, I know you can buy seasonings for popcorn, maybe try that next time after they are all done in the oven.

Oat Bran Muffins

I added raisins, walnuts, cinnamon, and vanilla. The batter seemed too thick so I added 4 more ounces of applesauce. I didn't have oat bran on hand but I did have wheat bran so I used that. I baked mine about 20 minutes. Turned out great. Thanks for the recipe!

Chicken Florentine Casserole

Wonderful! I did my sauce a little differently. I sauted the garlic, butter and mushrooms together, then added my spices and used 1/2 can of cream of mushroom soup and 1/2 can of cream of chicken with herbs. Added the parm. cheese. Used milk instead of cream. Left out the lemon juice and bacon because I didn't have on hand. I didn't use as much butter, only about a tbsp. I wanted to serve the dish with pasta and have everything in one casserole, so I put a layer of angel hair pasta on the bottom of my casserole dish. Next I put a layer of sauce. Layer of spinach, cubed chicken seasoned with salt and pepper (I just put mine in raw) and finally the rest of the sauce. Topped with some grated mozzerella cheese. Baked it in the oven at 375 for 30 -40 minutes. Turned out delicious!

Zucchini Cornbread Casserole

Delicious! I only used about 2 cups of zucchini and added about 1/2 cup of milk and some chopped jalapeno peppers. I also mixed all of the cheese into the batter instead of putting some on top. I only had to bake mine 30 - 40 minutes. Turned out great.

Vegetarian Korma

Delicious recipe! I used milk instead of cream to cut down on the fat content. I also used a little more curry powder than the recipe suggested. I precooked my carrots and potatoes in the microwave till they were about halfway done, then added them with everything else to simmer.

Caramel Corn Snack Mix

Refreshing Cucumber Salad

This was really good. I usually don't like cucumber salads, but I loved this one. I added about 1/4 tsp. of sugar to the dressing and I didn't put the tomatoes in until I served it. This prevented the dressing from getting too runny. I also made it without the tomato and it was just as delicious!

Asian Coleslaw

I used a bag of cole slaw mix, then cut the dressing recipe amounts in half. I used a little less peanut butter and soy sauce. I also added some water to thin the dressing out a bit. Added some peanuts on the top to garnish. Different and delicious! Thanks for the recipe.

Soft Oatmeal Cookies

These cookies are delicious! I followed the recipe exactly, added some dried cranberries and walnuts and baked mine for 10 - 11 minutes. I didn't chill the dough because I didn't have time and I just rolled them into balls; didn't flatten them. Turned out great! The smell when they are baking is heavenly! Next time I make them I will try adding chocolate chips. Thanks for a wonderful recipe.

Pesto Chicken Florentine

Delicious recipe! I used a jar of Ragu alfredo sauce and added some mushrooms to my dish. Next time I might try adding some black olives or artichokes. Will definitely make again.

Potato Salmon Patties

Really good. I love salmon patties and these are better than the ones my mom makes. I added a couple tbsp. of mayo to the mixture. Left out the dill and celery salt just because I didn't have any on hand. Thanks for the recipe!
