Apple Betty

It doesn't get better, or easier, than this! The perfect ending to a Fall feast! This is so quick to prep and can bake while you dine so as to be served warm. My husband just loves apple desserts and this was so effortless, yet would hold its own against a truly "classy" dessert. Comforting and festive. All ingredients are kitchen staples, so it can be thrown together on a whim, which is what I did!

Banana-Zucchini Bread

This recipe can be halved with excellent results. My entire family really enjoyed it--moist and delicious and healthy! It is exceptionally good with whipped cream cheese! Also freezes well! I substituted currants for the cranberries and pecans for the walnuts, just because it's what I had on-hand. Thanks for sharing this one!

Brown Sugar Cut-Out Cookies and Icing

I received loads of compliments on these cookies (do not overbake--they do not appear golden brown but if you bake too long they will be hard). One great thing about this recipe is that the frosting amount is perfect for the cookies. Normally I end up with a half a bowl of frosting left over!!

Italian Summer Squash Polenta Bake

My family went wild for this dinner! I added ground turkey to make a lovely one-dish meal. I loved all the veggies and I liked it with Romano substituted for the Parmesan. Delicious!!

Slow Cooker Pulled Pork

This couldn't be easier and it was delicious. I think I might add some garlic powder next time for a little more flavor, but my husband remarked several times about how good this was. I served a salad and corn on the cob with it, so it literally took about 10 minutes of my time to make this dinner!

Zucchini Boats on the Grill

Sloppy Joes II

This was a nice base Sloppy Joe recipe...pretty much just what I was looking for. I used ground turkey instead of beef and pureed the green pepper and onion so that my 2-yr old would eat it. Yum yum!

To Die For Blueberry Muffins

Super-fast and easy. My only complaint was that they were awfully crumbly. It made them hard to eat--they were really falling apart. It may have made a difference that I used butter instead of the veggie oil? Anyway, very tasty and my family enjoyed them.

Colonial Hot Buttered Rum

A super-yummy extra-indulgent treat!! I used Spiced Rum, which I would highly recommend for a little added flavor. Also, instead of whipped cream I put a small scoop of vanilla ice cream into each mug!

Scottley's Basic Yellow Cake

Thank you so much for a great recipe. I made a large sheet cake with this recipe and it came out like a dream. I took the advice of the other posters and made sure the butter was very light and fluffy, which I think is key. My cake was visually stunning and super-tasty. I admit I added some yellow food coloring to the batter because I wanted it really yellow!

Bill's Beefuna Burgers

Man, Bill, do you know what you're doin' or WHAT???? These were soooo excellent. Everyone loved them and you don't even taste the tuna. A little healthier than an all-beef burger with ALL the taste. The relish and onions add great flavor. Thanks, Bill!
